In reply to <a href="https://simplysusan.com.au/skinny-chocolate/#comment-3117">Lisa</a>.

Hi Lisa and thanks for stopping by. Good on you for starting with THM!
Once my chocolate has been in the freezer and is totally set, I take it out and put it in a container and pop it into the fridge where it stays fine. Yes, it can be re-melted. It can go on cakes and slices although they shouldn't be warm otherwise it will melt.

To be honest, I don't expect anyone else in my family to eat foods with stevia. They simply don't like it and have no intention of trying to lower their sugar intake. So, I make some with stevia for me and others I make with either coconut sugar or honey. It's hard for the kids when they've become accustomed to a certain food and then WE go and change it. That's our choice, not theirs so they may take a lot longer to come to terms with it. We need to take baby steps with family...and choose our battles wisely. Maybe start with some healthy changes that add to the diet rather that take away from it, in the early stages? But that's me and we are all different. I serve THM meals but always add extra foods for my non-THM menfolk.

Lisa, are you in Australia? Let's connect via email and I will be able to help with THM. :)

Hello there

I have a question. I have just started THM and I am getting discouraged with my boys saying the don't like this or that and one of them is skinny chocolate or the 85% chocolate. I don't like the skinny choc so I am looking lots of places for some other recipe that we will all like.

But they are saying they won't eat it etc. I have just gone and made some biscuits with dark choc drops and it is meant to have the choc on the outside of the biscuits and they are doing a no mum. You can't and the list goes on.
Can you remelt this chocolate you have made on biscuits or anything like that once it has been made? Can I refreeze the chocolate once it is melted again and put on something.

I Want to serve these biscuits at Christmas and to visitors but the horror of what my boys are saying is not encouraging me. They are saying mum you can't. It isn't fair. You can't make it for them or me... and it goes on...

Can I also put on slices and cakes etc... Does it have to be just a little bit made? Can i make it in bulk and will it work the same?
It is hard and tricky and I want to do the right thing by my family/boys.
A learning experience but at present a hard one.

I am trying to lose weight but it is a slow process but I am loving the food. I want to lose weight quicker but I don't know if it is my body or not.

Sorry for dumping. Are you able to help at some point
If not its cool.

Well I must go.

Thank you in advance.

Thank u for yr recipe, Susan :). I haven't tried any of the THM recipes yet, being a newbie. I have a packet of xylitol in the cupboard unopened and some stevia granules that came in a green tin with a little green spoon from the supermarket. I've not seen nunaturals.

Would I get the stevia extract and erythritol from a health food shop? The xylitol was expensive when I got it and I have been a little nervous to use it at $27 a packer. We holidayed in Sth Africa this year and it was $6 there so I was taken back at the price here. The shop assistant said it comes from there so that is why it's so cheap there.

I look forward to tasting this chocolate one day soon :)

Hi Lisa,
Aha! Sorry about that but because it is a tweaked recipe from the book, Trim Healthy Mama (which provides directions) I didn't think to write them. Plus it is ridiculously easy!

Simply mix all ingredients together. Pour into moulds *or* pour onto a plastic (disposable) plate and freeze for 15min. Either remove from moulds and store in the fridge or using a blunt knife to break chocolate into chunks.

In summer, you won't need to warm the coconut oil as it will be melted but in winter I sometimes put it into a bowl, which I put over a pot of simmering water and heat it very gently - just enough to melt the oil. Then pour the oil into the dry ingredients and stir gently to combine.

Does that help?

So, this may seem obvious to everyone else but, how do I MAKE these? I see the ingredient list but not the actual directions. Do I just add everything to the melted coconut oil and then put into molds to set?

HELP!

Yay! I am so glad you like it. Sometimes I use half homemade truvia and half xylitol. But the trick is to grind it first.

Susan I just made this chocolate using your recipe (except for the xylitol as I haven't made the trip to the health store yet so I replaced it with natvia) and it was DELICIOUS. When I made the recipe from the book I hated it and was sure I wasn't going to bother again. So thank you………I think~!!

Hmm, I'm in Australia and we don't have a huge range of cream. We have Thickened Cream which has gelatine and/or other vegetable gums and thickeners in it. And we have Pure Cream. As much as possible, I use the pure cream with no additives or thickeners.
