Hi Lisa and thanks for stopping by. Good on you for starting with THM! 
Once my chocolate has been in the freezer and is totally set, I take it out and put it in a container and pop it into the fridge where it stays fine. Yes, it can be re-melted. It can go on cakes and slices although they shouldn&#039;t be warm otherwise it will melt.

To be honest, I don&#039;t expect anyone else in my family to eat foods with stevia. They simply don&#039;t like it and have no intention of trying to lower their sugar intake. So, I make some with stevia for me and others I make with either coconut sugar or honey. It&#039;s hard for the kids when they&#039;ve become accustomed to a certain food and then WE go and change it. That&#039;s our choice, not theirs so they may take a lot longer to come to terms with it. We need to take baby steps with family...and choose our battles wisely. Maybe start with some healthy changes that add to the diet rather that take away from it, in the early stages? But that&#039;s me and we are all different. I serve THM meals but always add extra foods for my non-THM menfolk.

I have a question.  I have just started THM and I am getting discouraged with my boys saying the don&#039;t like this or that and one of them is skinny chocolate or the 85% chocolate.  I don&#039;t like the skinny choc so I am looking lots of places for some other recipe that we will all like.
  
But they are saying they won&#039;t eat it etc. I have just gone and made some biscuits with dark choc drops and it is meant to have the choc on the outside of the biscuits and they are doing a no mum. You can&#039;t and the list goes on. 
Can you remelt this chocolate you have made on biscuits or anything like that once it has been made? Can I refreeze the chocolate once it is melted again and put on something. 

I Want to serve these biscuits at Christmas and to visitors but the horror of what my boys are saying is not encouraging me. They are saying mum you can&#039;t.  It isn&#039;t fair. You can&#039;t make it for them or me... and it goes on... 

Can I also put on slices and cakes etc...  Does it have to be just a little bit made? Can i make it in bulk and will it work the same?
It is hard and tricky and I want to do the right thing by my family/boys.
A learning experience but at present a hard one. 

I am trying to lose weight but it is a slow process but I am loving the food. I want to lose weight quicker but I don&#039;t know if it is my body or not.
